I'm gonna be real with y'all: I didn't measure shit.
But because I love y'all, I revisited my footage and estimated how much of everything you'd need. Seriously, it's that good that I went through the trouble of figuring it out. Growing up in the Caribbean, I wasn’t introduced to grits. It wasn’t until I was in my late 20s that my best friend Jessica took me to Pappadeaux and put me on!
The entire thing probably took about 30 minutes to prepare and I can't wait for you guys to try this one and tell me what you think.
INGREDIENTS
SHRIMP SEASONING
▢ ½ teaspoon garlic powder
▢ ½ teaspoon onion powder
▢ ¼ teaspoon salt
▢ ¼ teaspoon black pepper
▢ ¼ teaspoon cajun seasoning
▢ ¼ teaspoon paprika
GRITS
▢ ¼ cup 5 minute grits
▢ ½ cup water
▢ ½ cup whole milk
▢ 1 tablespoon butter
▢ 2 tablespoons shredded cheddar cheese (add more if you'd like)
▢ salt & pepper to taste
SHRIMP
▢ ½ lb of shrimp, shelled and deveined
▢ 1 tablespoon sofrito
▢ ¼ cup diced onion, green/red pepper
▢ ¼ teaspoon garlic powder
▢ ¼ teaspoon onion powder
▢ ¼ teaspoon salt
▢ ¼ teaspoon black pepper
▢ ¼ teaspoon paprika
▢ olive oil
▢ scallion for garnish
INSTRUCTIONS
In a small bowl, season shrimp and set aside.
In a small pot, combine water, milk, butter and cheese over low/medium heat.
Whisk until combined.
Add grits and whisk until thickened.
Set aside on low heat or warmer. Whisk occasionally.
In a medium skillet on low/medium heat 1 cap of olive oil.
Add diced onion and peppers, seasoning and sofrito. Set aside.
In same skillet, lower the heat and brown the shrimp, flipping occasionally.
Once cooked, combine with veggies and remove from heat.
ASSEMBLE THE DISH:
In a medium bowl spoon in grits.
Top with shrimp and veggies.
Sprinkle with scallions and enjoy!
